Caesar Mix Pasta Sauce
Ingredients
- 1 pkg (450 g) Italpasta Artisan Spaghetti
- 1/3 cup (75 mL) olive oil, divided
- 2 stalks celery, diced
- 6 cloves garlic, thinly sliced
- 1/4 cup (60 mL) vodka or alcohol-free vodka
- 2 1/2 cup (625 mL) Clamato juice
- 1/2 cup (125 mL) tomato paste
- 1/2 tsp (2 mL) chili powder
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) black pepper
- 2 tbsp (30 mL) lemon juice
- 2 tbsp (30 mL) Worcestershire sauce
- 1 tbsp (15 mL) hot sauce
- 1/2 tsp (2 mL) celery salt
- 1/3 cup (75 mL) grated Parmesan cheese
- 3/4 cup (175 mL) stuffed green olives, for garnishing
- Celery heart leaves or sticks, for garnishing
- Lemon wedges, for garnishing
- Tajin seasoning, for garnishing
Instructions
- Cook pasta according to package directions; reserve 1/4 cup (60 mL) pasta cooking water and drain pasta.
- Meanwhile, in large skillet set over medium heat, heat 1/4 cup (60 mL) oil. Cook celery and garlic, stirring occasionally, for 2 to 3 minutes or until starting to soften. Pour in vodka; bring to a boil. Cook for 1 minute.
- Stir in Clamato juice, tomato paste, chili powder, salt and pepper; bring to a boil. Reduce heat to medium. Cook, stirring occasionally, for 8 to 10 minutes or until slightly thickened.
- Stir in lemon juice, Worcestershire, hot sauce and celery salt. Add pasta, pasta cooking water and Parmesan; cook, stirring frequently, for 1 to 2 minutes or until sauce clings to pasta well.
- Divide pasta among bowls. Top each with olives, celery and lemon. Garnish with drizzle remaining olive oil and sprinkle of Tajin seasoning. Serve pasta hot or cold.
Tips
Substitute lemon with lime if preferred.
Omit vodka or alcohol-free vodka if desired; instead, substitute with splash more Clamato juice.
