Curried Chicken Pasta Salad with Dried Fruit and Roasted Red Peppers


This pasta salad is a perfect addition to any picnic, potluck, or backyard barbeque. For ease of prep, take advantage of store-bought rotisserie chicken.

Ingredients

  • 2 cups (500 mL) Italpasta Rigatoni
  • 2 cups (500 mL) chopped cooked rotisserie chicken
  • 1 cup (250 mL) chopped roasted red peppers, patted dry
  • 1/2 cup (125 mL) chopped green onions
  • 1/2 cup (125 mL) dried cranberries , (or raisins)
  • 1/4 cup (60 mL) mayonnaise
  • 1 zest and juice of lime
  • 1 tbsp (15 mL) curry powder
  • 1/2 tsp (2 mL) ground turmeric
  • 1/2 tsp (2 mL) minced fresh ginger
  • 1/4 tsp  (1 mL) salt
  • pinch chili flakes
  • 1 clove garlic, minced

Instructions

  • Cook pasta according to package directions. Drain well.
  • Place pasta in a large mixing bowl.
  • Add remaining ingredients and toss until well combined.
  • Makes about 6 cups (1.5 L).

~ Add one diced Granny Smith apple to salad for added sweetness and texture.
~ Vegetarian? Add 1 cup (250 mL) drained and rinsed chickpeas to salad instead of chicken.
