Curried Chicken Pasta Salad with Dried Fruit and Roasted Red Peppers
Ingredients
- 2 cups (500 mL) Italpasta Rigatoni
- 2 cups (500 mL) chopped cooked rotisserie chicken
- 1 cup (250 mL) chopped roasted red peppers, patted dry
- 1/2 cup (125 mL) chopped green onions
- 1/2 cup (125 mL) dried cranberries , (or raisins)
- 1/4 cup (60 mL) mayonnaise
- 1 zest and juice of lime
- 1 tbsp (15 mL) curry powder
- 1/2 tsp (2 mL) ground turmeric
- 1/2 tsp (2 mL) minced fresh ginger
- 1/4 tsp (1 mL) salt
- pinch chili flakes
- 1 clove garlic, minced
Instructions
- Cook pasta according to package directions. Drain well.
- Place pasta in a large mixing bowl.
- Add remaining ingredients and toss until well combined.
- Makes about 6 cups (1.5 L).
Tips
~ Add one diced Granny Smith apple to salad for added sweetness and texture.
~ Vegetarian? Add 1 cup (250 mL) drained and rinsed chickpeas to salad instead of chicken.
