Gluten Free BBQ Pasta Salad with Canadian Bacon

- 1 pkg Italpasta Gluten Free Penne
- 3 tbsp extra virgin olive oil
- 1/2 cup BBQ sauce
- 2 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 2 tsp dijon mustard
- 4 cup baby spinach
- 8 oz Canadian bacon, cooked and sliced
- 1 red pepper, chopped
- Cook pasta according to package directions; drain.
- Meanwhile, whisk together barbecue sauce, olive oil, vinegar, maple syrup and Dijon mustard.
- Toss pasta with barbecue sauce mixture, spinach, bacon and red pepper.
