Greek Alphabet Soup
Ingredients
- 1.5 cups Italpasta Alphabets, cooked and drained
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 can (796 mL) diced tomatoes
- 4 cups reduced-sodium chicken broth
- 8 oz each baby spinach and crumbled feta cheese
- 1 tsp lemon zest and minced garlic
- 1/4 tsp each salt and pepper
Instructions
- Cook tomatoes with vinegar, zest, garlic, salt and pepper in oil in a large pot over medium heat.
- Stir in broth; bring to a boil. Add baby spinach and alphabets; simmer for 2 minutes. Sprinkle with crumbled feta.
