Greek Alphabet Soup

  • 1.5 cups Italpasta Alphabets, cooked and drained
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 can (796 mL) diced tomatoes
  • 4 cups reduced-sodium chicken broth
  • 8 oz each baby spinach and crumbled feta cheese
  • 1 tsp lemon zest and minced garlic
  • 1/4 tsp each salt and pepper


  • Cook tomatoes with vinegar, zest, garlic, salt and pepper in oil in a large pot over medium heat.
  • Stir in broth; bring to a boil. Add baby spinach and alphabets; simmer for 2 minutes. Sprinkle with crumbled feta.
