Italian Sausage and Baby Shell Soup

Ingredients

  • 2 cups Italpasta Baby Shells, cooked and drained
  • 1 tbsp extra virgin olive oil
  • 1/2 lb Italian sausage
  • 1 each onion, carrots and garlic, chopped
  • 1 can (769 mL) diced tomatoes
  • 4 cups chicken broth
  • 1/4 cup each grated Parmesan cheese and chopped basil

Instructions

  • Brown sausage in oil over medium heat. Add onion, carrot and garlic; cook for 5 minutes. Stir in tomatoes and broth; simmer for 15 minutes.
  • Stir in shells and cheese; cook for 2 minutes. Sprinkle with basil.
