Italian Sausage and Baby Shell Soup
Ingredients
- 2 cups Italpasta Baby Shells, cooked and drained
- 1 tbsp extra virgin olive oil
- 1/2 lb Italian sausage
- 1 each onion, carrots and garlic, chopped
- 1 can (769 mL) diced tomatoes
- 4 cups chicken broth
- 1/4 cup each grated Parmesan cheese and chopped basil
Instructions
- Brown sausage in oil over medium heat. Add onion, carrot and garlic; cook for 5 minutes. Stir in tomatoes and broth; simmer for 15 minutes.
- Stir in shells and cheese; cook for 2 minutes. Sprinkle with basil.
