Mediterranean Pasta

Ingredients

  • 2 cups (500 mL) Italpasta Artisan Gemelli
  • 1/4 cup (60 mL) olive oil
  • 3 garlic cloves, minced
  • 2 cups (500 mL) grape tomatoes, halved
  • 1/2 cup (125 mL) chopped green onion
  • 2 cups (500mL) baby spinach leaves
  • 1 cup (250 mL) pitted black olives
  • 3/4 cup (175 mL) crumbled feta cheese
  • 1/2 tsp (2 mL) salt
  • 1/4 tsp (1 mL) pepper

Instructions

  • Cook pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and cook, stirring, for about 30 seconds until fragrant.
  • Stir in tomatoes and onion. Cook, stirring until tomatoes and onion just begin to soften, about 2 minutes.
  • Stir in cooked pasta, spinach, olives, feta, salt and pepper until well combined.
  • Cook for an additional minute until pasta is heated through.
  • Divide pasta evenly between serving bowls.
  • Makes 6 cups (1.5 L).
