Party-Size Italian Pasta Salad

Ingredients

  • 1/2 package Italpasta Tradizionale Scoobi Do, cooked and drained
  • 1/2 cup Italpasta Extra Virgin Olive Oil
  • 1/3 cup red wine vinegar
  • 1/4 cup Parmesan cheese, grated
  • 1 tbsp Dijon mustard
  • 2 clove garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup fresil basil (or basil purée ina tube)
  • 4 cups baby arugula
  • 1 cup cocktail bocconcini, halved
  • 1 cup cherry tomatoes, halved
  • 2 jars marinated artichoke hearts, drained
  • 1/2 red onion, thinly sliced
  • 1/2 cup black olives, pitted and halved
  • 1/2 cup green olives, pitted and halved
  • 1/4 cup sun-dried tomatoes, chopped
  • 4 oz canned cannellini beans, rinsed and drained

Instructions

  • Whisk together olive oil, vinegar, Parmesan, mustard, garlic, oregano, salt and pepper until blended; stir in basil. In large serving bowl, toss pasta with dressing. Stir in arugula, bocconcini, cherry tomatoes, artichokes, red onion, olives, sun-dried tomatoes, salami and cannellini beans.
