Party-Size Italian Pasta Salad
Ingredients
- 1/2 package Italpasta Scoobi Do Pasta, cooked and drained
- 1/2 cup extra virgin olive oil
- 1/3 cup red wine vinegar
- 1/4 cup Parmesan cheese, grated
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp pepper
- 1/3 cup finely chopped fresh basil or basil purée in a tube
- 4 cups baby arugula
- 1 cup cocktail bocconcini, halved
- 1 cup cherry tomatoes, halved
- 2 jars marinated artichoke hearts, drained
- 1/2 red onion, thinly sliced
- 1/2 cup black olives, pitted and halved
- 1/2 cup green olives, pitted and halved
- 1/4 cup sun-dried tomatoes, finely chopped
- 4 oz Italian-style salami (such as Genoa salami), cubed
- 1 can canned cannellini beans, rinsed and drained
Instructions
- Whisk together olive oil, vinegar, Parmesan, mustard, garlic, oregano, salt and pepper until blended; stir in basil. In large serving bowl, toss pasta with dressing. Stirin arugula, bocconcini, cherry tomatoes, artichokes, red onion, olives, sun-dried tomatoes, salami and cannellini beans.
