Pasta Caesar Salad
Ingredients
- 1/2 pkg (350 g) Italpasta Scoobi Do
- 3/4 cup (175 mL) mayonnaise
- 2 tbsp (30 mL) lemon zest
- 1/3 cup (75 mL) lemon juice
- 1/4 cup (60 mL) drained capers, coarsely chopped
- 1/4 cup (60 mL) olive oil
- 4 tsp (20 mL) Dijon mustard
- 4 tsp (20 mL) soy sauce
- 2 cloves garlic, minced
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) pepper
- 1 cup (250 mL) grated Parmesan cheese, divided
- 1 head romaine lettuce, chopped, about 4 cups/1 L
- 1 cup (250 mL) toasted diced cubes sourdough or rustic Italian bread, 1/2-inch/1 cm cubes
Instructions
- Cook pasta according to package directions. Drain and refresh under cold running water; drain well.
- In large bowl, whisk together mayonnaise, lemon zest, lemon juice, capers, oil, Dijon, soy sauce, garlic, salt and pepper until blended. Stir in 1/2 cup (125 mL) Parmesan. Add pasta. Toss with dressing until well coated.
- Just before serving, toss in romaine, bread cubes and remaining Parmesan.
Tips
Add shredded rotisserie chicken, chopped cooked bacon or grilled shrimp to salad if desired.
For meal-prepped lunches in to-go jars, divide dressing evenly among six 2-cup (500 mL) mason jars. Layer in pasta mixture, romaine, bread cubes and Parmesan. Seal jar with lid. Store in refrigerator for 1 to 2 days. Shake before eating.
