Radiatori with Herb Cheese Sauce
Ingredients
- 450 g (16 oz) Italpasta Artisan Radiatori
- 1 lb (500 g) fresh chorizo sausage, crumbled
- 1/4 cup (60 mL) butter
- 3 cloves garlic, minced
- 2 tbsp (30 mL) finely chopped fresh thyme
- 1/4 cup (60 mL) all-purpose flour
- 2.5 cups (625 mL) 2% milk
- 1/2 tsp (2 mL) each salt and pepper
- 2 cups (500 mL) shredded Cheddar cheese
- 1 wheel (150 g) herb cheese spread, crumbled
- 1/4 tsp (60 mL) grated Parmesan cheese
- 2 tbsp (30 mL) finely chopped fresh parsley
Instructions
- Cook radiatori according to package directions. Reserve 1/4 cup (60 mL) pasta cooking water; drain.
- Meanwhile, in large skillet set over medium heat, cook sausage, stirring occasionally, for 4 to 6 minutes or until browned and slightly crispy. Using slotted spoon, transfer to plate.
- Melt butter in the same skillet. Cook garlic and thyme, stirring occasionally, for 1 to 2 minutes or until garlic is softened. Sprinkle in flour. Cook, stirring, for 2 to 3 minutes or until incorporated.
- Slowly whisk in milk then bring to a boil. Reduce to simmer; while stirring constantly, for 8 to 10 minutes or until thickened. Stir in salt and pepper, Cheddar and herb cheese spread until cheeses are melted and mixture is smooth.
- Stir in radiatori, reserved pasta water, Parmesan cheese and parsley. Cook for 1 to 2 minutes until combined.
Tips
Tips: If desired, serve pasta with your favourite sweet or spicy hot Italian sausages. Or, before adding pasta, finish cheese sauce with 1 lb (500 g) peeled and deveined shrimp, cooking shrimp for 2 to 3 minutes or until pink, curled and cooked through.
