Ziti with Ricotta and Kale
Ingredients
- 450 g Italpasta Ziti, cooked and drained
- 2 tbsp extra virgin olive oil
- 1 medium onion, chopped
- 1 clove garlic, chopped
- 1/4 tsp dried chili flakes
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp lemon zest
- 1 tsp fresh thyme
- 1/2 cup ricotta cheese
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese, shaved
- 3 cup kale leaves, chopped
- 2 tbsp lemon juice
Instructions
- Cook onion and garlic in oil over medium heat for 5 minutes. Add chili, salt, pepper and thyme; cook for 1 minute.
- Stir in ricotta, kale and broth; cook for 2 minutes.
- Add lemon zest, lemon juice and cooked pasta; toss for 1-2 minutes.
- Sprinkle with Parmesan cheese
