Ziti with Ricotta and Kale

Ingredients

  • 450 g Italpasta Ziti, cooked and drained
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, chopped
  • 1 clove garlic, chopped
  • 1/4 tsp dried chili flakes
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp lemon zest
  • 1 tsp fresh thyme
  • 1/2 cup ricotta cheese
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese, shaved
  • 3 cup kale leaves, chopped
  • 2 tbsp lemon juice

Instructions

  • Cook onion and garlic in oil over medium heat for 5 minutes. Add chili, salt, pepper and thyme; cook for 1 minute.
  • Stir in ricotta, kale and broth; cook for 2 minutes.
  • Add lemon zest, lemon juice and cooked pasta; toss for 1-2 minutes.
  • Sprinkle with Parmesan cheese
