Curried Chicken Rigatoni Pasta Salad with Dried Fruit and Roasted Red Peppers
This rigatoni pasta salad is a perfect addition to any picnic, potluck, or backyard barbeque. For ease of prep, take advantage of store-bought rotisserie chicken.
1cup(250 mL) chopped roasted red pepperspatted dry
1/2cup(125 mL) chopped green onions
1/2cup(125 mL) dried cranberries (or raisins)
1/4cup(60 mL) mayonnaise
1zest and juice of lime
1tbsp(15 mL) curry powder
1/2tsp(2 mL) ground turmeric
1/2tsp(2 mL) minced fresh ginger
1/4tsp (1 mL) salt
pinch chili flakes
1clove garlicminced
Instructions
Cook pasta according to package directions. Drain well.
Place pasta in a large mixing bowl.
Add remaining ingredients and toss until well combined.
Makes about 6 cups (1.5 L).
Tips
~ Add one diced Granny Smith apple to salad for added sweetness and texture.~ Vegetarian? Add 1 cup (250 mL) drained and rinsed chickpeas to salad instead of chicken.
