Spaghetti Sushi Roll


These sushi rolls swap traditional sushi rice for seasoned spaghetti, wrapped around crispy tempura shrimp, fresh cucumber and creamy avocado, and drizzled with spicy sriracha mayo. A fun, pasta fusion twist on sushi that boasts a feast of textures and flavours.

Ingredients

  • 225 g (8 oz) Italpasta Artisan Spaghetti
  • 2 tbsp (30 mL) rice vinegar
  • 1 tsp (5 mL) granulated sugar
  • 8 store-bought frozen shrimp tempura
  • 1/2 English cucumber, julienned
  • 1 avocado, halved, pitted, peeled and sliced
  • 1/4 cup (60 mL) sriracha mayo, divided

To Serve:

  • Soy sauce
  • Pickled ginger
  • Wasabi
  • Bamboo sushi mat or plasticwrap (for rolling)

Instructions

  • Cook Italpasta Artisan Spaghetti according to package directions; drain. Transfer spaghetti to medium bowl and toss with rice vinegar and sugar. Let cool.
  • Meanwhile, cook shrimp tempura according to package directions. Let cool slightly.
  • To assemble, lay a bamboo sushi mat on a flat surface. Line up individual spaghetti noodles side by side on the mat with the ends at the top and bottom in front of you. Trim the top and bottom to make even edges.
  • To fill the roll, arrange 2 pieces shrimp tempura, a quarter of the cucumber and a quarter of the avocado on the spaghetti along the closest edge. Drizzle with 1 tbsp (15 mL) sriracha mayo.
  • Carefully lift the closest edge of the sushi mat and start rolling the sushi away from you, gently pressing to form a tight roll. Once you reach the top edge, dampen the spaghetti with a little water to seal the roll. Repeat with remaining spaghetti, shrimp tempura, cucumber, avocado and sriracha mayo to make 4 rolls.
  • Using a sharp knife, carefully cut into 6 pieces. Arrange on platter and serve with soy sauce, pickled ginger and wasabi as desired.
